These are so simple to make. And good for you! They are a great little muffin to get going in the morning- if you are like me and can't stomach a feed first thing, then these little things with a mug a tea will start you out on a good foot!
It's a recipe that I have evolved over the years but one that I can almost claim to be entirely my own :) Obviously... no recipe is entirely ones own, hence my use of almost and sure most ingredients in regular day-to-day baking are all the same anyway. But none-the-less, this recipe is one I have tinkered with, again and again, and now I think it's perfect.
This yields 12 muffin size cakes but you'll get more if you go with the fairy size cases.
- 125g self raising flour
- 100g plain flour
- 1 good teaspoon baking powder
- 2 large eggs (free range)
- 225g caster sugar
- 110g butter
- 150ml low fat milk
- 2 teaspoons vanilla (or one, or none, if you prefer it not so vanilla-y)
- 200g mixed berries ( I used a forest fruits mix of berries here. I had them in my freezer they go in here frozen)
- 100g rolled oats ( I use an organic oats and seeds mix)
- Heat the oven to 180 C.
- Cream the butter and the sugar until light and fluffy and then add the eggs one at a time until the yolks disappear.
- Dry whisk together the flours, baking powder and oats.
- Add half flour and the half milk to the butter mix.
- Add your vanilla.
- Fold in the fruit but be careful not to over mix.
- Fill cases 2/3 full and then pop in your oven for 20-25 minutes until nice an golden on top, your cake test comes

It's a baking challenge run alternate months between Laura Loves Cakes and Dolly Bakes . The theme of this month is "New Year, New You". Healthy eating challenges are hard for me as a baker, but I think these muffins are a good morning staple. You could of course substitute the sugar for a low-cal sweetener, but I don't have anything like that in the house. The rolled oats and seeds are a wholegrain, naturally low in sugar and a great source of fibre.
Sure what's not to love?

I might give them a try (even though I am certainly not much use in the kitchen) embarrassed smiley needed here!
I have most of the ingredients except the rolled oats (would you believe I have never bought them) I will try the supermarket today (wonder would they have them in Aldi?
Anyway I love the way you can throw the berries in frozen and the recipe sounds like something that maybe I could master!

DeleteYou'll get it all there! Kavanagh's do an organic oats and seeds mix. They don't always have it in stock in our's but you will definitely get the oats on their own, look in the cereals section. Then pop over to the nuts and berries part and pick up a bag of mixed seeds, that fix the no seeds part- just throw in a handful with 100g of the oats. Go down to the freezer section and you'll get the frozen berry mix. You'll be sorted :)

DeleteWell Hazel if the bake shop is a bit in the future, you could certainly publish that cookbook and use all your own photos! I like that you don't skimp on the berries :) I make an "Exploding Blueberry Muffin", which is now so named because the blueberries we get here are so big that if you bite into one in the muffin, chances are it'll explode down your clean shirt.
